Sweet treat!

Do you know this fruit?:


it's not very appealing, isn't it?!

But as I like to discover new fruits and vegetable;
What grow in our planet, I wanted to try them...

So after a bit of research, I bought a box of Sweet Tamarind.


You can find them in the Asian fresh product 

To open them, you have to break the shell by pushing on it.

once you took of the shell, there is some 'strings' around that you have to take off too:

still not appealing! 

when they are fresh they are pretty sticky but after few days they are like dates and they taste like them too.

There is huge and plenty of seeds in there

Pumpkin season!

How to use your pumpkin raw!

1) Juice it!

2 cups of sliced pumpkin, 2 carrots, 2 apples, ginger and cinnamon to taste
makes a tasty and delicious seasonal juice!


2) Make a raw pumpkin tart

with raw coconut whipped cream!

The texture of this recipe is almost like an apple sauce; I would recommend either to freeze it a little bit or add chia seeds, or avocado or durian fruits to get a harder consistency.

3) Use the pumpkin seeds to make a seed pate:
Wash and dry the seeds; dehydrate them over night.
Later on soak a cup of pumpkin seeds with 1/2 cup of almonds
drain, mix together with some garlic, 1/4 cup of sundried tomatoes, 2 tbsp of olive oil , 2 tbsp of hemp protein, 1 tbsp of lemon juice, a pinch of salt and some herbs.

4) Make some crakers and other small pumpkin carrot cakes
5) A raw pumpkin soup...
6) Some pumpkin cookies...

Raw Pancakes

Yes these is such thing as raw pancakes!
I made some for our thanksgiving breakfast and it was yummy!
They need to be made the day before.


What you'll need to make 5 thick raw pancakes:

1 ripe banana
1 cup of pecans
1/4 cup f pine nuts
1/4 cup of grounded flax-seed
3 dates
2 tbsp of agave
2 tbsp of honey
2 tbsp of maple syrup
a pinch of salt
a bit of vanilla (optional)

apple or other fruits for the topping and maple syrup

Blend all the ingredients together; spread them making pancake shape on flex sheet to go in the dehydrator (105F) over night (or more + - 14 hours)

When ready add your fruits and maple syrup
and enjoy!

What do you do with all these carrots?!

We bought a bag of 25lbs of organic carrots; 
They were so vibrant as all the vegetables at this Farmer Market 's stand!


So what do you do with all these carrots?

As I want to stay in the raw food world, here some of the recipes I did:



Raw Carrot Juice

Raw Carrots and turmeric crackers



and here are 2 of this recipes...

First I will share this RAW CARROT SOUP 
recipe that I found on Sophia's website, it's very easy and so delicious!


Juice 10 to 12 carrots (keep the pulp to make crackers or carrot cake)
Blend a ripe avocado and a red pepper
Add the carrot juice to this blend and pour over a diced zucchini
It's so sweet and creamy!

NOW The Raw Carrot Cake

Use the Carrot pulp (2 cups)

add 3/4 to 1 cup of soaked raisins

 Blend together


 Pour on a cup of grounded walnuts or pecans nuts (we prefer pecans!)
and mix well with a spatula (You can use your hands if you wish too!)

Prepared some small mold and pour some dried shredded coconut 
(To help unmold them)

here is the coconut I used:

Press the dough into the molds


and refrigerate for few hours
(if you cannot wait you can eat them right away!)
Tap the mold on a plate to unmold them:

Then decorate with fresh fruits



You can also add a raw chocolate sauce!
Enjoy your raw dessert!
